  Carrageenan is a natural substance found in seaweed while poligeenan is not found in nature at all. Poligeenan and carrageenan are often confused, but they are completely different. The use of carrageenan in food dates back to approximately A.D. in Ireland. Early Irish cooks discovered they could extract a thickener similar to carrageenan from Irish moss.
